白菜木耳粉絲魚湯 Bok Choy and Black Fungus Fish Soup


森綠曾在一家餐廳吃了這菜式,令人難以忘懷,所以自己嘗試學做。以下是我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出大約4-5人份的湯水

材料:
1. 白菜 (1 斤,切一半)
2. 新鮮黑木耳 (1 杯)*
3. 粉絲 (1包,浸軟並剪小段)**
4. 油豆腐 (8-9顆,略沖洗)
5. 魚湯 (1500 亳升)
6. 薑片 (數片)
7. 白胡椒粉 (適量)
8. 糖 (2 茶匙)
9. 鹽 (1.5 茶匙)
* 也可以用乾木耳浸軟
** 預先用水浸好

做法:
1. 準備並煮沸魚湯,把薑片放進湯裡煮10-15分鐘
2. 加入黑木耳,稍微煮開
3. 加入粉絲和油豆腐,略煮,讓油豆腐壓入湯中吸收湯汁
4. 加入白菜,煮至略軟
5. 用鹽、糖和白胡椒調味
6. 將油豆腐壓入湯中吸收湯汁
7. 用鹽和糖調味
8. 上桌時,加入黑或白胡椒
9. 然後便完成了!

個人心得:
1.在步驟1,煮薑片的時間可以隨個人喜歡薑味的多少而調整

SumLook tried this dish at a restaurant and could not forget how good it tasted. So I tried out and learned how to make it at home. This recipe is very easy and yummy. I hope you like it.

This recipe can serve 4-5 persons.

Ingredients:
1. Bok Choy.Chinese White Cabbage (1 Tael, cut in halve)
2. Fresh Black Fungus (1 cup)*
3. Vermicelli (1 pack, soaked and cut into shorter strands)**
4. Fried Bean Curd (8-9, rinse a bit)
5. Fish Broth (1500 ml)
6. Ginger (4-5 slices)
7. White pepper (some)
8. Sugar (2 tsp)
9. Salt (1.5 tsp)
* Can also use the dry black fungus
** Need to be soaked in water beforehand

How to cook:
1. Prepare and boil the fish broth, put in ginger and boil for 10-15 mins
2. Add the black fungus and boil a bit
3. Add Vermicelli and fried bean curd, cook a bit
4. Add in Bok Choy, cook until it is a bit soft
5. Season with salt, sugar and white pepper
6. Press the fried bean curd into soup to absorb the soup
7. Season with salt and sugar
8. When served, add white pepper
9. And it is done!

Personal thought and Tips:
1. For step 1, can adjust the boiling time according to personal preference of ginger taste
