和式醬燒舞茸 Fried Maitake Mushroom in Japanese sauce: 簡易、快捷又美味


森綠的小孩都很喜歡吃菇類,這個菜式不單好吃而且快捷,希望大家也試做。

這食譜可製作出大約1-2人份的醬燒舞茸

材料:
1. 新鮮舞茸 (150 克)
2. 濃口醬油 (老抽) (10 ml)
3. 味醂 (0.5 湯匙)
4. 無鹽牛油 (20 克)
5. 水 (1 湯匙)
6. 胡椒粉 (適量)
7. 芫茜碎 (適量)

做法:
1. 準備好醬汁,把舞茸分割成差不多的大小
1.1 在碗裡,混合濃口醬油(10 ml)、味醂(0.5湯匙)和水(1 湯匙)
1.2 將舞茸分成大小相近的塊狀。br /> 2. 白鑊烤舞茸菇
2.1 將舞茸放入煎鍋中,然後開中火
2.2 每面烤2分鐘。按壓舞茸使其扁平些
3. 調味盛盤
3.1 用中火,在鍋中加入牛油(20 克),讓舞茸的兩面都沾上油脂
3.2 每面煎2分鐘。按壓舞茸使其扁平些
3.3 加入醬汁,讓醬汁均勻地覆蓋舞茸的兩面
3.4 按壓舞茸使其扁平些,煎至大部分醬汁收乾
3.5 關火。將舞茸盛入盤中
3.6 磨些黑胡椒在上面,撒上切碎芫茜
4. 然後便完成了!

This recipe can serve 1-2 persons.

1. Fresh Maitake Mushroom (150 g)
2. Soya Sauce (10 ml)
3. Mirin (0.5 Tbsp)
4. Unsalted butter (60 g)
5. Water (1 Tbsp)
6. Black Pepper (Some)
7. Chopped Parsley (Some)

How to cook:
1. Prepare the sauce and separate the mushroom into the same size:
1.1 In a bowl, mix well soya sauce, mirin and water
1.2 Separate Maitake mushrooms into similar sizes

2. Toast Maitake Mushrooms
2.1 Lay Maitake mushrooms in a frying pan, then turn on medium fire
2.2 For each side, toast for 2 mins. Press to flatten the mushroom
3. Season and plate
3.1 Over medium fire, add butter into pan so that each side of mushroom is covered with fat
3.2 For each side, fry for 2 mins. Press to flatten the mushroom
3.3 Add in the sauce, let sauce cover both sides of mushroom
3.4 Press to flatten the mushroom, fry until most sauce is absorbed
3.5 Remove from heat. Put the mushroom onto a dish
3.6 Grind some black pepper on top, sprinkle with chopped parsley
4. Then it is done!
