森綠孩子們很喜歡吃披薩,這次加了湯種讓麵團濕潤些和柔軟些,很適合小孩和老人家吃。晚上準備好麵團,放入冰箱發酵,因為不用二次發酵,第二天早上在麵團上加上食材便可以輕鬆作為早餐,希望你們也會一起試做。

這食譜可製作出大約 6個直徑12cm 的披薩份量。
材料:
1. 高筋麵粉 (180 克 + 45 克 給湯種)
2. 砂糖 (4.5 克)
3. 鹽 (4.5 克)
4. 乾酵母 (1.5 克)
5. 水 (105 克)
6. 熱水 (接近100度,90 克)
7. 橄欖油 (9 克)
8. 酸種 (55 克,可選)
9. 起司.芝士 (適量)
10. 櫻桃蕃茄 (適量,切片)
11. 蘑菇 (適量,切大片)*
12. 蕃茄醬 (適量)
13. 蛋黃醬 (適量)
14. 黑松露醬 (適量)
* 與大蒜和洋蔥一起炒,用鹽、糖、黑胡椒和白酒調味
做法:
1. 製作湯種:
1.1 在碗裡,加入高筋麵粉 (45克),然後加入熱水(接近100度,90 克)並快速拌勻
1.2 靜置10分鐘( 室溫)
2. 在湯種碗中,加入水 (105克)和酸種 (55克),拌勻
3. 加入乾酵母 (1.5克),拌勻。然後加入橄欖油 (9克)並拌勻
4. 在另一個碗中,將高筋麵粉 (108克)、糖 (4.5克)和鹽 (4.5克)混合均勻
5. 加入麵粉混合物,分3-4次,拌勻
6. 用保鮮膜蓋住麵團,靜置 30 分鐘(室溫)
7. 把手弄濕,將麵團從邊緣向中心拉並折疊(約1分鐘)

10. 蓋上保鮮膜,放入冰箱(最好是蔬果抽屜)發酵至少6小時,最多1.5日
11. 烘烤當天,將披薩石以 230°C 預熱1 小時
12. 製作蘑菇黑松露醬披薩的配料:
12.1 在鍋中加油,用中火,先將洋蔥略炒,然後加入大蒜
12.2 當洋蔥變軟時,加入蘑菇
12.3 用鹽、糖和黑胡椒調味,炒至蘑菇略軟
12.4 加入一些乾香草和白酒,略炒,離火,放涼
13. 將麵團從冰箱取出,撒上麵粉,放在桌上
14. 在麵團上撒些麵粉,弄平,然後分成等份
15. 將麵團弄平,把邊緣拉到中心並捲成一個球
16. 用毛巾蓋住麵團,靜置10分鐘
17. 做型:
17.1 在桌子和手上撒些麵粉,以避免麵團黏手
17.2 將麵團從中心向邊緣推,做成一個中心薄、邊厚的圓形
17.3 將麵團放在烘焙紙上
18. 製作櫻桃蕃茄披薩
18.1 在麵團塗上番茄醬,然後放上櫻桃番茄
18.2 撒上披薩起司
19. 製作蘑菇黑松露醬披薩
19.1 在麵團塗上黑松露醬,然後放上早前炒的洋蔥蘑
19.2 撒上披薩起司並在起司上擠一些蛋黃醬
20. 將麵團放入烤箱,噴灑水5次,立即關上烤箱的門
21. 將披薩以 230 °C 烘烤 16-18 分鐘至金黃
22. 然後便完成了!

SumLook's children love to eat pizzas. For this recipe, I have added Tangzhong, which helps to make the dough more moist and soft. This pizza is very good for children and elderly. Since there is no need of second fermentation, you can simply prepare the dough a night before, then on the next day, you can simply add the toppings on top and bake it and can enjoy the pizza as breakfast. It is very easy to make and I hope you like it.

This recipe can make 6 pizzas of 12 cm diameter.
Ingredients:
1. Strong flour or bread flour (180 g + 45 g for Tangzhong)
2. Sugar (4.5 g)
3. Salt (4.5 g)
4. Dry Yeast (1.5 g)
5. Water (105 g)
6. Hot Water (close to 100。C, 90 g)
7. Olive oil (9 g)
8. Sourdough (55 g, optional)
9. Cheese (some)
10. Cherry tomatoes (some, sliced)
11. Button mushrooms (some, sliced)*
12. Tomato sauce for pasta (Some)
13. Mayo (some)
14. Black Truffle Sauce (some)
* Fry with garlic and onion, and season with salt, sugar, black pepper, white wine and oil
How to cook:
1. Preparing Tangzhong:
1.1 In a bowl, put in strong flour (45g), then add in boiling water (90g), quickly mix well
1.2 Rest in room temperature for 10 mins
2. Add water (105 g) and sourdough (55 g) and mix well
3. Add in dry yeast(1.5 g), mix well. Then add olive oil(9 g)and mix well
4. In a separate bowl, mix well the strong flour (180 g), sugar (4.5g)and salt (4.5g)
5. Add in the flour mixture, in 3-4 times, mix well
6. Cover the dough with plastic wrap, rest for 30 mins (at room temp.)
7. Wet your hands, pull and fold the dough from edge towards the center (for 1 min)
8. Cover the dough with plastic wrap, rest for 30 mins (at room temp.)
9. Wet your hands, pull and fold the dough from edge towards the center (for 1 min)
10. Cover with plastic wrap, ferment in the fridge (preferably vegetable and fruit drawer) for at least 6 hours, at most 1.5days
11. On the day of baking, heat up the pizza stone for 1 hour at 230。C
12. Preparing Mushrooms Toppings:
12.1 In a pan, add oil, over medium heat, slightly fry the onion first then add in garlic
12.2 When onion is soft, add in button mushrooms
12.3 Season with salt, sugar and black pepper, fry until mushrooms are slightly soft
12.4 Add in some dry herb and white wine, fry a bit, remove from heat, let it cool
13. Take the dough out from fridge, sprinkle flour on top, and lay it on table
14. Sprinkle flour on the dough, pat lightly to flatten, divide it into equal shares
15. Pat the dough flat, and pull the edge to the center and roll up as a ball
16. Cover the dough with towel, rest for 10 mins
17. Forming:
17.1 Sprinkle the table and hands with flour to avoid stickiness of dough
17.2 Push the dough from center to the edge to make a circle with thin center and thick edge
17.3 Lay the dough on baking paper
18. Making Cherry tomato pizza
18.1 Spread tomato sauce on top then lay cherry tomatoes
18.2 Sprinkle pizza cheese on top
19. Making Mushroom on truffle sauce pizza
19.1 Spread truffle sauce on dough, and lay the cooked onion and mushrooms
19.2 Sprinkle pizza cheese on top and squeeze some mayo on top of cheese
20. Put the dough into the oven, and spray water for 5 times, close oven right away
21. Bake the pizzas at 230 。C for 16-18 mins until golden
22. Then it is done!
