白蘿蔔味噌湯 Miso soup with white turnip


森綠一家都愛味噌湯,趁著現在是白蘿蔔的季節煮了這道白蘿蔔味噌湯。材料簡單又好味又容易做,希望你們喜歡。

這食譜可製作出大約4-5人份量

材料:
1. 白蘿蔔 (1條中型,切1厘米厚的圓形)
2. 胡蘿蔔 (1/2 條,切薄圓形片)
3. 鴻禧菇 (1 包)
4. 油豆腐 (6-8顆,切3幼條)
5. 昆布 (1片,切幼條)
6. 白米 (1湯匙,先洗淨)
7. 豬肉湯底 (750 亳升)
8. 日式柴魚高湯 (750 亳升)
9. 蔥 (適量,切丁)
10 乾元貝 (1 顆,用水浸好, 可選)

調味料:
1. 味噌 (3湯匙)
2. 鹽 (1 茶匙)
3. 糖 (2 茶匙)

做法:
1. 準備日式柴魚高湯並以約 1:1 份量與豬肉湯混合
2. 以中火將肉湯煮沸,然後加入昆布,煮10分鐘
3. 加入白蘿蔔和米粒,以中火煮30分鐘。記得蓋上蓋子但留個小縫隙
4. 轉小火,煮10分鐘
5. 加入胡蘿蔔、鴻禧菇和油豆腐,中火煮15分鐘
6. 用湯把味噌(3 湯匙)稀釋,拌勻至順滑,然後加入湯裡
7. 加糖 (2 茶匙)和鹽 (1 茶匙)調味
8. 最後在上面撒上蔥花。 這樣就完成了!

個人心得:
1. 在步驟2,昆布也可以先加入肉湯煮好後才切幼條
2. 如加乾元貝,在步驟1,連同浸乾元貝的水一起加入肉湯內

SumLook family loves Miso soup. Currently white turnip is in season so I cook this soup for my family. This dish is easy to make and is very yummy. I hope you like it.

This recipe can make 4-5 servings

Ingredients:
1. White Turnip (1 medium, cut into circles with 1cm thickness)
2. Carrot (1/2, sliced into circles)
3. Small brown mushroom (1 pack)
4. Fried Bean Curds (6-8 pieces, cut into 3 slices)
5. Kombu.Kelp (1 piece, cut into thin slices)
6. Rice grain (1 tbsp, rinse well)
7. Pork Broth (750 ml)
8. Japanese Bonito Fish Flakes Dashi (750 ml)
9. Spring onion (some, diced)
10. Dried scallop (1, soak it with water, optional)

Seasonings:
1. Miso (3 Tbsp)
2. Salt (1 tsp)
3. Sugar (2 tsp)

How to cook:
1. Prepare the Japanese bonito fish flake dashi and mix with pork broth
2. Boil over medium heat, then add in Kombu.Kelp and boil for 10 minutes
3. Add in white turnip and rice grain, boil for 30 minutes over medium heat. Remember to put on lid but leave a small gap
4. Turn to low heat, cook for 10 minutes
5. Add in carrot, small brown mushroom and fried bean curd, boil for 15 mins over medium heat
6. Use the soup to dilute the miso paste (3 Tbsp), mix until smooth, then add into the soup
7. Season with sugar (2 tsp) and salt (1 tsp)
8. Lastly, sprinkle diced spring onion on top. Then it is done!

Personal tips and thoughts:
1. In step 2, a whole piece of Kombu.Kelp can be added into broth first, then julienne it after it is cooked

2. If dried scallop is used, can add it, together with the water used for soaking, into the broth in step 1
