蒸冬菇荸薺肉餅 Steamed pork patty with water chestnut

這食譜可製作出大約4-5人的份量

材料:
1. 豬肉 (1/2 磅,切碎)
2. 冬菇.香菇 (4顆,切小丁)
3. 荸薺.馬蹄 (6-7顆,切小丁)
4. 醬油(2 湯匙)
5. 芝麻油(1 湯匙)
6. 糖(2 茶匙)
7. 粟粉.玉米澱粉(4 茶匙)
8. 浸冬菇的水(2 湯匙)*
*也可用普通開水

做法:
1.首先切好豬肉:
1.1 去掉豬肉上的白色筋膜
1.2 先將豬肉切片,再把豬肉剁碎
1.3 先向一個方向剁,再對折,向另一個方向剁
1.4 重複折疊和剁碎,直到豬肉切剁成肉碎
2. 荸薺去皮,然後切丁
3. 將冬菇泡軟後,去蒂,先將冬菇切片後切成小丁
4. 在一個大碗裡,混合豬肉碎、荸薺和香菇
5. 用醬油、芝麻油、糖和粟粉調味
6. 拌勻,然後加入一些泡香菇的水,再拌勻
7. 將肉餅放入乾淨的碗中,蓋上鋁箔
8. 燒一鍋水。 將肉餅蒸45分鐘
9. 這樣便完成了!

個人心得:
1. 在為豬肉調味後,可把豬肉放入冰箱內醃1小時,這樣更入味

This recipe can serve 4-5 persons

Ingredients:
1. Pork (1/2 pound, minced)
2. Dried Shitake mushroom (4, finely diced)
3. Water Chestnut (6-7, finely diced)
4. Soya Sauce(2 Tbsp)
5. Sesame Oil(1 Tbsp)
6. Sugar(2 tsp)
7. Cornstarch(4 tsp)
8. Water used for soaking black mushrooms(2 Tbsp)*
*Can also use normal cooked water

How to cook:
1. First prepare the pork:
1.1 Remove the white fascia from the pork
1.2 First slice the pork, then chop the pork to mince
1.3 First chop in one direction, then fold, and chop in the other direction
1.4 Repeat the folding and chopping until the pork is finely minced
2. Peel the water chestnut, then dice it fine
3. Slice and dice the soaked shitake mushrooms into small cubes
4. In a big bowl, mix minced pork, water chestnut and shiitake mushroom
5. Season with soya sauce, sesame oil, sugar and cornstarch
6. Mix all ingredients, then add some water used for soaking mushroom, mix well
7. Put the patty into a clean bowl, cover with aluminum foil
8. Boil a pot of water. Steam the patty for 45 mins
9. Then it is done!

Personal thought and Tips:
1. After seasoning the pork, can keep the marinated pork in the fridge for 1 hours. It will be more tasty
