和風豚肉蕎麥湯麵 Soba with Pork belly in Japanese Broth


這是森綠曾在井井屋吃過的一道菜式,當時孩子小,味道不太濃而美味,很適合孩子吃,是每逢到訪必點的菜式。材料簡單又好味又容易做,希望你們喜歡。

這食譜可製作出大約4-5人份量

材料:
五花腩肉片 (450g,切段讓容易入口)
蕎麥麵 (4-5束)
洋蔥 (1個,切幼條)
京蔥 (一條,只要白色部份,切幼條)
鴻禧菇 (一包)
小棠菜 (適量,可選,焯熟)
薑 (數片)
蔥 (適量,切丁)
日式柴魚高湯 (1 升)
豬肉湯 (1 升)

調味料:
和風昆布鰹魚汁 (約150-200ml,見下圖)*
糖 (2 茶匙)

做法:
1. 準備湯底
1.1 準備日式柴魚高湯並以約1:1份量與豬肉湯混合
1.2 將肉湯煮沸,然後加入洋蔥和京蔥,煮至洋蔥變軟
1.3 加入和風昆布鰹魚汁
1.4 加糖調味。 現在湯底已準備好了!
2. 在煮湯底的同時,我們可以準備蕎麥麵
2.1 把蕎麥麵放入沸水中,煮至熟
2.2 瀝乾蕎麥麵,用煮熟的冷水沖洗蕎麥麵
2.3 再次瀝乾蕎麥麵,備用
3. 準備五花腩肉片
3.1 將蔥和姜放入一鍋開水中,略煮
3.2 加入五花腩肉片,焯至熟,然後取出備用
4. 將煮好的五花肉片加入湯底,煮至湯再次沸騰
5. 將鴻禧菇加入湯底,略煮,現在湯已做好了!
6. 上桌時,將麵條放入碗中,和加入一些焯熟的小棠菜
7. 然後在上面放五花肉片,再淋上湯
8. 最後在上面撒上蔥花。 這樣就完成了!

個人心得:
*1. 和風昆布鰹魚汁的濃度因不同牌子而不同,請按個人口味調整份量

Previously, this is a dish Sumlook used to order this for my child everytime we visited Don Don Ya. It's taste is not too strong and yummy, so very suitable for children. This dish is easy to make and is very yummy. I hope you like it.

This recipe can make 4-5 servings

Ingredients:
Sliced Pork Belly (450g, cut into shorter pieces)
Soba (4-5 bundles)
Onion (1, julienned)
Leek (1 stalk, only the white part, sliced)
Small brown mushrooms (1 pack)
Green chinese cabbage (some, optional, blanched)
Ginger (3-4 slices)
Spring onion (some, diced)
Japanese Bonito Fish Flakes Dashi (1L)
Pork broth (1L)

Seasonings:
Katsuo Tsuyu Sauce (Bonito Soya Sauce) (about 150-200ml, see pic below)*
Sugar (2 tsp)

How to cook:
1. Prepre the soup base
1.1 Prepare the Japanese bonito fish flake dashi and mix with pork broth
1.2 Boil the broth. Then add in onion and leek and boil until onion is soft
1.3 Add in Katsuo Tsuyu Sauce (Bonito Soya Sauce)
1.4 Season with sugar. Now the basic soup base is ready!
2. While cooking the soup base, we can prepare the soba
2.1 Add the soba in a pot of boiling water, boil until cooked
2.2 Drain the soba, rinse with cooked cold water
2.3 Drain the soba again and set aside for later use
3. Prepare the pork belly
3.1 Add spring onion and ginger into a pot of boiling water, cook a bit
3.2 Add in pork belly, blanch until cooked, then take out
4. Add cooked pork belly into soup base, cook until the soup boils
5. Add in small brown mushrooms, cook a bit. Now the soup is ready!
6. When served, add noodle in a bowl, then some boiled green chinese cabbage
7. Then add pork belly on top, and pour the soup in
8. Lastly, sprinkle diced spring onion on top. Then it is done!

Personal tips and thoughts:
*1. Different brands of Katsuo Tsuyu Sauce are of different concentration, please adjust the amount for personal taste
