這食譜可製作出大約5人的份量
材料:
1. 伊麵 . E-fu Noodle (5-6 餅)
2. 蝦 . Shrimps* (適量)
3. 草菇 . Straw mushrooms (1 杯)
4. 甘荀.胡蘿蔔 . Carrot (1/2條,切條)
5. 韭黃 . yellow chives (適量,切段)
6. 蠔油 . Oyster Sauce (3 湯匙)
7. 醬油 . Soya Sauce (2 湯匙)
8. 糖 . Sugar (1+2 茶匙)
9. 蔴油 . Sesame oil (適量)
10. 雞湯或豬肉湯 . Chicken broth or pork broth (約 250-300 ml)
* 蝦在煮前才用鹽和胡椒粉略醃
做法:
1. 用沸水煮草菇5分鐘,取出備用,然後切一半
2. 用沸水煮伊麵至軟,瀝乾備用
3. 起鍋,將醃好的蝦仁炒熟,取出備用
4. 在同一個鍋中,加入上湯 (250 ml) 和水 (250 ml)(上湯和水比例為 1:1),加少許糖 (1 茶匙)調味
5. 待上湯煮沸後,加入伊麵,煨至大部分上湯已被吸收
6. 加入胡蘿蔔、草菇
7. 加入一些上湯 (50 ml),並用蠔油 (3 湯匙)、醬油 (2 湯匙)和糖 (2 茶匙)調味
8. 加入炒好的蝦仁,再翻炒一下,拌勻
9. 差不多完成時,加入韭黃,略炒
10. 最後加入少許芝麻油,拌勻
11. 這樣便完成了!

This recipe can make 5 servings
Ingredients for Marinade:
1. E-fu Noodle (5-6 pieces)
2. Shrimps* (some)
3. Straw mushrooms (1 cup)
4. Carrot (1/2, julienned)
5. Yellow chives (some, cut into pieces)
6. Oyster Sauce (3 Tbsp)
7. Soya Sauce (2 Tbsp)
8. Sugar (1+2 tsp)
9. Sesame oil (some)
10. Chicken broth or pork broth (about 250-300 ml)
* Marinate the shrimps with salt and pepper right before cooking
How to cook:
1. Boil straw mushrooms in boiling water for 5 minutes, then take out for later use. Cut into halves
2. Boil the E-fu noodle until it is soft, drain it and set aside
3. In a wok, fry the marinated shrimps until cooked, then take out for later use
4. In the same wok, add in broth (250ml) and water (250ml) (ratio as 1:1), and season with some sugar (1 tsp)
5. When the broth is boiling, add in E-fu noodles and braise it until most broth is absorbed
6. Add carrots, straw mushrooms
7. Add in some broth(50 ml) and season with oyster sauce (3 Tbsp), soya sauce(2 Tbsp) and sugar (2tsp)
8. Add in fried shrimps, then fry a bit and mix well
9. When it is almost done, add in yellow chives, fry a bit
10. Lastly, add some sesame oil, mix well
11. Then it is done!
