惹味泰式炒花甲或蛤蜊 Fry clams with Thai spicy sauce: 不能抗拒的惹味家常菜

這食譜可製作出大約4-5人份的泰式炒花甲

材料:
1. 花甲.蜆.蛤蜊 (1.5斤 或 900克)
2. 金不換.九層塔 (1束,只要葉)
3. 大蒜 (6瓣,切成蓉)

調味料:
1. 魚露 (1 湯匙)
2. 雞粉 (1 茶匙)
3. 糖 (1.5 茶匙)
4. 粟粉.玉米澱粉 (1 茶匙)
5. 泰式紅咖哩膏 (1 茶匙)
6. 泰式辣椒膏 (1.5 湯匙)
7. 水 (150 -200 ml)

做法:
1. 準備花甲
1.1 在鍋中,加水(1.5升)和鹽(1茶匙),拌混
1.2 加入花甲。讓它們靜置 1 小時以去除沙子
1.3 撈出瀝乾水,將花甲洗淨
1.4 燒一鍋水,將花甲汆燙至大部分開口
1.5 撈出花甲,在涼水下撕去花甲的空殼
2. 中火,加入油和蒜末,略炒
3. 轉小火,加入泰式紅咖哩醬 (1 茶匙)和泰式辣椒醬 (1.5 湯匙),略炒
4. 加入水 (150 -200 ml)、魚露 (1 湯匙)、雞粉 (1 茶匙)和糖 (1.5 茶匙),拌勻
5. 加入粟粉水,攪拌至稠
6. 現在可以調整調味料
7. 轉中火,加入花甲,略炒
8. 加入金不換,炒至花甲剛熟
9. 然後便完成了!

個人心得:
1. 可按個人喜好而調整調味料的份量。

SumLook's father is a fantastic chef, in both Chinese and Thai cuisines. He has taught me this yummy savoury dish. This dish of fry clam is so yummy and easy to make that you don't want to miss. Below is my recipe. I hope you like it.

This recipe can serve 4-5 persons.

Ingredients:
1. Clams (1.5 tael or 900g)
2. Thai Basil (1 bunch, need only leaves)
3. Garlic (6 cloves, minced)

Seasonings:
1. Fish Sauce (1 Tbp)
2. Chicken Powder (1 tsp)
3. Sugar (1.5 tsp)
4. Corn Starch (1 tsp)
5. Thai Red Curry Paste (1 tsp)
6. Thai Chili Paste (1.5 Tbp)
7. Water (150 -200 ml)

How to cook:
1. Prepare the clams:
1.1 In a pot, add water (1.5L) and salt (1 tsp), stir to mix
1.2 Add in the clams. Let them sit for 1 hour to remove their sand
1.3 Remove the water and wash the clams
1.4 Boil a pot of water, blanch the clams until most of them open up
1.5 Remove the water and tear off the empty shell of the clams under cool water
2. Over medium heat, add oil and minced garlic, fry a bit
3. Lower the heat, add in Thai red curry paste (1 tsp) and Thai Chili paste (1.5 Tbp), fry a bit
4. Add in water (150 -200 ml), fish sauce (1 Tbp), chicken powder (1 tsp) and sugar (1.5 tsp), mix well
5. Add in corn starch solution, stir until it is thicken
6. Can adjust the seasoning now
7. Turn to medium heat, add in the clams and fry a bit
8. Add in Thai basil and fry until the clams are just cooked
9. Then it is done!

Personal thought and Tips:
1. The ratios of seasonings can be adjusted for personal taste
