家常鍋貼.餃子 (豬肉韮菜) Homemade Pot sticker . Dumpling (Pork with Chinese chive)

這食譜可製作出大約 30 顆的鍋貼.餃子

饀料材料:
1. 豬肉碎 (400g)
2. 鮮冬菇 (約4-6塊,切碎)
3. 蝦 (約15尾蝦仁,切細丁或拍成膠)
4. 雞蛋 (1隻)
5. 韮菜 (一束,切細丁)
6. 黑木耳 (約4-6塊,切碎)
7. 薑蓉 (1-2 茶匙,可選)
8. 餃子皮 (約30塊)

調味料:
1. 醬油 (2 湯匙)
2. 蠔油 (1 湯匙)
3. 芝麻油 (2 湯匙)
4. 白胡椒粉 (適量)
5. 糖 (3 茶匙)
6. 雞湯 (20 ml,可用水代替)
7. 粟粉 (4 茶匙)

做法:
1. 準備餃子餡料:
1.1 在大碗內,把 1-7 的饀料材料混合
1.2 用芝麻油(2 湯匙)、糖 (1 茶匙)、白胡椒粉、醬油(2 湯匙)和蠔油(1 湯匙)調味,然後拌勻
1.3 加入少許雞湯或水 (20 ml)和白胡椒粉,拌勻。放入冰箱醃30分鐘
2. 將一些餡料舀到餃子皮的中心上,在邊緣沾少許水
3. 將餃子皮對折疊,並在邊緣位折疊和壓一下來封口
4. 煎餃子的方法:
4.1 中高火,在鍋中加熱油並加入鍋貼
4.2 加入鍋貼,煎至底部略帶褐色
4.3 加入熱水至鍋貼高度的1/3 (視頻內用200 ml),然後蓋上蓋子
4.4 當大部分水已蒸發後,挪開蓋子
4.5 用中火煎至幾乎所有水分蒸發,這樣便完成了!
5. 用水煮餃子的方法:
5.1 燒一鍋熱水,把餃子放進去
5.2 當水再次沸騰,餃子浮起來時,加入一碗冷水
5.3 煮至水再次沸騰。這樣便完成了!

個人心得:
1. 第4.3步驟的水的份量需要按鍋內鍋貼的多少而調節,這裡的份量是假設鍋內裝滿了鍋貼

This recipe can make about 30 pieces of Pot stickers

Ingredients for fillings:
1. Minced Pork (400g)
2. Fresh Shiitake Mushrooms(4-6pieces, finely diced)
3. Shrimp (About 15, diced or smashed into paste)
4. Egg (1)
5. Chinese Chives (1 bunch, diced)
6. Black fungus (4-6 pieces, finely diced)
7. Minced Ginger (1-2 tsp, optional)
8. Dumpling Wraps (about 30 pieces)

Seasoning:
1. Soya Sauce (2 Tbsp)
2. Oyster Sauce (1 Tbsp)
3. Sesame Oil (2 Tbsp)
4. White Pepper (Some)
5. Sugar (3 tsp)
6. Chicken broth(20 ml, can use water instead)
7. Cornstarch(4 tsp)

How to cook:
1. Prepare the fillings:
1.1 In a big bowl, add in all 1-7 fillings ingredients
1.2 Season with sesame oil (2 Tbsp), sugar (2 tsp), salt (1 tsp), white pepper, soya sauce (2 Tbsp) and oyster sauce (1 Tbsp), then mix well
1.3 Add some chicken broth (or water, 20ml) and white pepper. Mix well. Put in the fridge and marinate for 30 minutes
2. Scoop some filling onto the center of the wrap, pat little water around the edge
3. Fold the wrap into halves, fold and press the edges together to seal
4. How to fry the pot stickers:
4.1 Over medium high heat, heat up oil in the pan
4.2 Add in pot stickers and fry until the bottom is a bit brownish
4.3 Add hot water up to 1/3 of the height of pot sticker (200ml in the video), then cover with lid
4.4 Remove the lid when most water is evaporated
4.5 Over medium heat, fry until almost all water is evaporated.Then it is done!
5. How to boil the dumplings:
5.1 Boil a pot of hot water and put the dumplings in
5.2 When the water boils again and dumplings are afloat, add a bowl of cold water
5.3 Cook until the water boils again. Then it is done!

Personal thought and Tips:
1. In step 4.3, the amount of hot water should be adjusted according to the amount of pot stickers in the frying pan. The figure here is based on a frying pan full of pot stickers
