豚肉炒絲瓜黑木耳 Fry pork with Angled luffa and black fungus

這食譜可製作出大約 4-5 人份量

材料:
1. 豬肉 (半磅,切片)*
2. 絲瓜 (2 條,切大塊)
3. 黑木耳 (適量)
4. 胡蘿蔔 (1/2 條,切片,半月形)
5. 草菇(適量)**
6. 蒜頭(3瓣,切粒)
* 豬肉先用少許醬油、糖、水和油略醃
** 草菇先用鹽、糖、水略焯

調味料:
1. 蠔油 (1 湯匙)
2. 鼓油 (1 湯匙)
3. 糖 (2 茶匙)
4. 白胡椒粉 (適量)
5. 粟粉.玉米澱粉 (適量)

做法:
1. 怎樣處理絲瓜
1.2 先切去絲瓜的兩端然後切去硬邊
1.3 刨掉絲瓜大部份的皮
1.4 滾刀將絲瓜切大塊
2. 用中火將豬肉炒至剛熟,然後取出備用
3. 在乾淨的平底鍋中,用中火將大蒜炒至香
4. 加入胡蘿蔔,然後絲瓜,略炒
5. 加入適量熱水(約75毫升),稍微煮一下
6. 用蠔油、醬油和糖調味,略炒
7. 加入炒好的豬肉,再加入草菇和黑木耳,略炒
8. 蓋上鍋蓋,燜至絲瓜變軟
9. 用粟粉溶液勾芡,拌勻
10. 最後加入白胡椒粉。 這樣就完成了!
11. 便完成了!

個人心得:
1. 也可不用絲瓜,改用佛手瓜或翠用瓜

This recipe can serve 4-5 persons.

Ingredients:
1. Pork (1/2 pound, sliced)*
2. Angled luffa.Loofah gourd (2, chopped into big pieces)
3. Black Fungus (some)
4. Carrot (1/2, sliced into semi-circle)
5. Straw mushrooms (some)**
6. Garlic(3 cloves, diced)
* Marinate pork with little soya sauce, sugar, water and oil
** First blanch straw mushrooms with water, salt and sugar

Seasoning:
1. Oyster Sauce (1 Tbsp)
2. Soya Sauce (1 Tbsp)
3. Sugar (2 tsp)
4. White Pepper (some)
5. Cornstarch (some)

How to cook:
1. Handle loofah gourd
1.2 Remove the tips and then hard edges of the loofah gourd
1.3 Peel off most of the peel of loofah gourd
1.4 Roll and chop loofah gourd into big pieces
2. Over medium heat, fry pork until it is just cooked, then take it out and set aside
3. In a clean pan, over medium heat, fry garlic until aromatic
4. Add in carrot and then loofah gourd, fry a bit
5. Add in some hot water (about 75 ml), cook a bit
6. Season with oyster sauce, soya sauce and sugar, fry a bit
7. Add in fried pork, then straw mushrooms and black fungus, fry a bit
8. Cover with lid, braise until loofah gourd is soft enough
9. Thicken the sauce with cornstarch solution, mix well
10. Lastly, add in white pepper
11. Then it is done!


Personal thought and Tips:
1. Can replace Loofah gourd with Chayote(Foshugua) or Zucchini
