大蔥馬玲薯湯 Potato and Leek Soup: 冬天的窩心暖湯


森綠很喜歡大蔥馬玲薯湯,味道濃郁卻十分容易做。以下自己的食譜,希望你們喜歡。

這食譜可製作出大約4-5人份的大蔥馬玲薯湯

材料:
1. 大蔥.京蔥 (2條,切段,只用白色部分)
2. 白洋蔥 (1 個,切大塊)
3. 馬玲薯.土豆 (2小顆或1大顆,切大塊)
4. 香腸或培根 (4條,切大塊,先汆過)
5. 白酒 (125 ml)
6. 雞湯或豬骨湯 (1升)
7. 蔥 (2 棵,切丁)
8. 糖 (2茶匙)
9. 鹽 (1茶匙)

做法:
1. 切好大蔥、洋蔥和馬玲薯
2. 在鍋內,加入油,炒香洋蔥
3. 然後加入大蔥,炒至軟
4. 然後加入馬玲薯,略炒
5. 加入白酒 (125ml),煮至大部分白酒已蒸發掉
6. 加入肉湯,用高火煮沸湯
7. 當馬玲薯煮熟變軟後,關火,讓湯冷卻
8. 將涼湯放入攪拌機。攪拌湯至幼滑
9. 把幼滑的湯放回鍋中,以中火加熱
10. 用糖(2茶匙)和鹽(1茶匙)調味
11. 不時攪拌,以免湯燒燶
12. 當湯略沸時,加入汆過的香腸或培根
13. 當湯再煮沸時,便完成了!

個人心得:
1. 上桌時,在上面撒上一些蔥末,和加一些黑胡椒粉會更美味

SumLook loves Potato and Leek soup. It is so tasty and so easy to make. Below is my recipe after a lot of trials and research. I hope you like it.

This recipe can serve 4-5 persons.

Ingredients:
1. Leek (2, cut into big pieces, only white part)
2. White Onion (1, cut into big pieces)
3. Potato (2 small ones or 1 big one, cut into big pieces)
4. Sausage or bacon (4 pieces, cut into big pieces, blanched)
5. White wine (125 ml)
6. Chicken broth or pork broth (1L)
7. Spring onion (2 stalks, diced)
8. Sugar (2 tsp)
9. Salt (1 tsp)

How to cook:
1. Cut the leek, onion and potato
2. In the frying pan, add in oil, fry an onion
3. Then add in the leek, fry until they are soft
4. Then add in potato, fry a bit
5. Add in white wine (125ml), cook until most wine is evaporated
6. Add in the broth, boil over high fire
7. when the potatoes are well cooked and soft, turn off the fire. Let the soup cool down
8. Scoop the cooled soup into blender and blend it until it is smooth
9. Pour the blended soup back into the pot and heat up over medium heat
10. Season with sugar (2 tsp) and salt (1 tsp)
11. Stir from time to time to prevent the soup from getting burnt
12. Add in the blanched sausage or bacon when the soup is about to boil
13. Bring the soup to boil over medium heat. Then it is done!

Personal thought and Tips:
1. When served, sprinkle some diced spring onion on top and add some black pepper
