節瓜眉豆花生湯 Hairy gourd with black-eyed peas and peanuts soup

這食譜可製作出大約4-5人份的湯水

材料:
1. 節瓜 (2個小形的,切大塊)
2. 花生 (2 湯匙)
3. 眉豆 (2 湯匙,浸約3小時)
4. 乾瑤柱.乾元貝 (2 顆,略沖洗並浸泡)*
5. 粟米.玉米 (1條,切大塊) 5. 豬肉湯底 (1500 亳升)
6. 薑片 (可選,數片)
7. 章魚乾 (1塊,略沖洗)
8. 糖 (2 茶匙)
9. 鹽 (1.5 茶匙)
* 預先用水浸好,並保留用來浸泡的水

做法:
1. 把眉豆浸泡至少3小時。浸泡乾瑤柱。準備肉湯
2. 把節瓜兩頭切去,並把皮刮去,切大塊
3. 將乾瑤柱、泡乾瑤柱的水和章魚乾加入肉湯
4. 中火,煮沸45分鐘
5. 加入眉豆、花生、節瓜、玉米和薑片(可選),煮沸30分鐘
6. 然後轉小火煮30分鐘
7. 用鹽和糖調味
8. 然後便完成了!

This is a common home-made soup. It is easy to make and yummy. I hope you like it.

This recipe can serve 4-5 persons.

Ingredients:
1. Hairy gourd (2 small ones, cut into big pieces)
2. Peanuts (2 Tbsp )
3. Black-eyed Peas (2 Tbsp, soaked for 3 hours)
4. Dried scallop (2 pieces, rinsed and soaked)*
5. Corn (1, cut into big pieces) 5. Pork Broth (1500 ml)
6. Ginger (optional, 2-3 slices)
7. Dried squid (1 piece, rinsed)
8. Sugar (2 tsp)
9. Salt (1.5 tsp)
* Soaked and keep the water for soaking

How to cook:
1. Soak black-eyed peas for at least 3 hours. Soak dried scallops and prepared pork broth
2. Remove 2 tips of hairy gourd. Then remove the peel by scrubbing. Cut into big pieces
3. Add dried scallops, water for soaking scallops and dried squid into pork broth
4. Over medium heat, boil for 45 minutes
5. Add in black-eyed peas, peanuts, hairy gourd, corn and ginger (optional), boil for 30 minutes
6. Then turn to low fire and boil for 30 minutes
7. Season with salt and sugar
8. And it is done!
