日式炒烏冬 Japanese Fried Udon


森綠一家在一家日本餐廳吃過日式炒烏冬,便在家稍為改良了食譜,效果不錯,而且做法簡單。希望你們喜歡。

這食譜可製作出大約 4-5 人份的日式炒烏冬

材料:
烏冬 (4-5包)
豬肉 (半磅,切片)*
椰菜.捲心菜 (1,切大塊)
胡蘿蔔 (1條,切片)
洋蔥 (1 個,切丁)
鮮冬菇 (6-8個,切片)
香芹 (適量,切丁)
蒜頭 (適量,切成蓉)
豉油 (3 湯匙)
蠔油 (3-4 湯匙)
糖 (2+1 茶匙)
鹽 (1 茶匙)
白胡椒粉 (適量)
芝麻油 (適量)
* 豬肉先用少許醬油、糖、粟粉和油略醃

做法:
1. 先準備醬汁:
1.1 在一個碗裡,將蠔油、醬油、糖(2 茶匙)和水 (4-5湯匙) 混合
2. 將烏冬面煮 5 分鐘或 70% 熟,然後瀝乾備用
3. 中火炒豬肉至90%熟,取出待用
4. 在同一個鍋裡,加入油,把大蒜炒香
5. 加入胡蘿蔔和新鮮香菇一起炒,然後加入少許熱水,略炒
6. 加入椰菜.捲心菜,和用少許糖(1 茶匙)和鹽(1 茶匙)調味,略炒
7. 加入早前炒過的豬肉一起炒,並加少許白胡椒粉,略炒
8. 加入烏冬面和醬汁,炒至麵條熟並吸收所有醬汁
9. 最後加入香油和芹菜,拌勻
10. 便完成了!

SumLook had once tried this dish at a Japanese restaurant. So I revised it a bit and it turned out quite well. This recipe is very easy and yummy. I hope you like it.

This recipe can serve 4 persons.

Ingredients:
Udon (4-5 packs)
Pork (1/2 pound, sliced)*
Cabbage (1, cut into big pieces)
Carrot (1, sliced)
Onion (1, diced)
Fresh Shiitake Mushroom (6-8, sliced)
Chinese Celery (some, diced)
Garlic (some, minced)
Soya Sauce (3 Tbsp)
Oyster Sauce (3-4 Tbsp)
Sugar (2+1 tsp)
Salt (1 tsp)
White pepper (some)
Sesame Oil (some)
* Marinate pork with little soya sauce, sugar, cornstarch and oil

How to cook:
1. First prepare the sauce:
1.1 Mix oyster sauce, soya sauce, sugar and water in a bowl
2. Boil Udon for 5 minutes or 70% cooked, then drain for later use
3. Over medium heat, fry pork until 90% cooked, set aside for later use
4. In the same wok, add oil and fry garlic until aromatic
5. Add in carrot and fresh shiitake mushroom to fry together. Then add in some hot water and fry a bit
6. Add in the cabbage, and season with some sugar and salt. Fry a bit
7. Add the fried pork to fry together, add some white pepper, fry a bit
8. Add in Udon and the sauce, fry until noodle is cooked and absorb all sauce
9. Lastly, add sesame oil and chinese celery, mix well
10. Then it is done!


Personal thought and Tips:
1. The vegetables can be changed to personal favourite vegetables and the amount can also be adjusted accordingn to personal preference
