Thai Delicacy: 泰式豬肉碎沙律 Thai minced pork salad (Laab, Larp)


森綠很喜歡泰式豬肉碎沙律,這是一道泰國菜式,十分惹味。問了遠在曼谷的父母怎樣做,便在家試了做,在此分享我們的食譜,希望你們喜歡。

這食譜可製作出大約 4-5 人份量

材料:
免治豬肉 (1磅) *
糯米 (3-4 湯匙)
檸檬葉 (4-5 片,切幼絲或碎)
紅蔥頭 (5-6 個,切絲)
蔥 (3 湯匙,切丁)
薄荷葉 (3-4 湯匙,略切)
* 不用醃,也可改用雞肉

調味料:
泰式辣椒粉 (適量,隨個人喜好)
魚露 (3-4 湯匙)
青檸汁 (3 個 或 4 湯匙)
糖 (1 茶匙,隨個人喜好)

做法:
1. 準備做糯米粉:
1.1 用中低火烤糯米
1.2 持續烘烤和攪拌,直至糯米變成咖啡色
1.3 將糯米研磨至幼細
1.3.1 首先將穀物放入三明治袋中,把糯米放平
1.3.2 用廚房紙巾蓋住袋子。把米捶打至幼細
2. 除去檸檬葉的主葉脈,然後把檸檬葉切幼絲或碎
3. 用中火熱鍋,加入少許油或水
4. 先把免治豬肉的一面煮熟
5. 然後將豬肉混合併掰開,炒至熟
6. 如果鍋中有水,將其從鍋中取出
7. 將豬肉炒至熟,然後關火
8. 在鍋內,加入紅蔥頭、蔥和檸檬葉,拌勻
9. 加入魚露、青檸汁、少許糖和辣椒粉調味,拌勻
10. 加入糯米粉 (3-4 湯匙),拌勻
11. 最後加入切碎的薄荷,拌勻
12. 這樣便完成了!

個人心得:
1. 如有磨研器,可以在第1步驟時用來磨糯米粉
2. 糯米粉可以做多些,多了的可放在樽內下次用
3. 調味料和香草的份量可隨個人喜好調整

Sumlook loves this dish. So I asked my parents who are in Bangkok how to make it; then try it out the recipe. I hope you like my recipe.

This recipe can serve 4-5 persons.

Ingredients:
Minced pork (1 pound) *
Sticky rice.Glutinous rice (3-4 Tbsp)
Kaffir Lime leaves (4-5 pieces, julienned or chopped fine)
Shallot (5-6, julienned)
Spring Onion (3 Tbsp, diced)
Mint (3-4 Tbsp, roughly chopped)
* No need to marinate. Can use minced chicken

Seasoning:
Thai Grounded Chili Powder (some, personal preference)
Fish Sauce (4 Tbsp)
Lime juice (3 or 4 Tbsp)
Sugar (1 tsp, personal preference)

How to cook:
1. Prepare Glutinous Rice Powder
1.1 Toast the glutinous rice over medium low heat
1.2 Keep toasting and stirring until the rice turns brownish
1.3 Grind the rice until fine
1.3.1 First put the rice into sandwich bag, lay the rice flat
1.3.2 Cover the bag with kitchen tissue. Hammer the rice until fine
2. Remove the main vein of Kaffir leaves. Julienned or chop it fine
3. Over medium heat, add little oil or water into the pan
4. First fry one side of minced pork until cooked
5. Then mix and break the pork apart, fry until it is cooked
6. If there is water in the pan, remove it from the pan
7. Fry the pork until cooked, then turn off the fire
8. In the pot, add in shallots, spring onion and kaffir leaves, mix well
9. Season with fish sauce, lime juice, little sugar and chili powder, mix well
10. Add in grounded glutinous rice powder, mix well
11. Lastly, add chopped mint, mix well
12. Then it is done!


Personal thought and Tips:
1. Can use grinder to grind the glutinous rice in step 1
2. Can prepare more glutinous rice powder. For the remaining, can store it in a jar for later use
3. The amount of the seasoning and herb can be adjusted according to personal preference
