森綠很喜歡吃韭菜饀餅、韭菜盒子、韭菜粿等,所以便靈機一觸,試用 Bruno 三文治機 (Sandwich maker)來做韭菜饀餅。餡料可以隨意加減自己喜愛的東西。在此分享我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出兩個韭菜饀餅
材料:
1. 韭菜 (1 小束,切丁或小段)
2. 蝦米 (1 湯匙,切小丁)*
3. 紅蔥頭 (1 個,切絲)
4. 豬肉碎 (適量)**
5. 白糖 (1/2 茶匙,可選)
6. 鹽或天然雞粉 (1/2 茶匙)
7. 雞蛋 (1 隻)
8. 烘過的白芝麻 (適量,可選)
9. 冷凍餡餅皮 (見下圖)
* 把蝦米洗淨並浸20分鐘
** 豬肉先用少許醬油、糖、油和白胡椒粉略醃
做法:
1. 準備餡料:
1.1 用中火加熱油
1.2 將切好的蝦米爆香
1.3 加入紅蔥頭,炒至香
1.4 加入豬肉碎,炒至熟
1.5 關火。 加入韭菜同拌
1.6 加糖、鹽(或天然雞粉)和白胡椒調味,拌勻
2. 將三明治機預熱 2 分鐘
3. 在一個碗內將雞蛋打勻成蛋漿,這是用來塗在餡餅上
4. 攤出冷凍的餡餅皮,並切出兩個長方形,一個比三文治模具大,一個略小
5. 將較大的餡餅皮放在預熱的三明治機上
6. 根據模具的形狀,讓餡餅皮貼服其上,造出凹位
7. 將餡料鋪在餡餅皮上
8. 然後將較小的餡餅皮放在上面,並在邊緣位,將多餘的餡餅皮向內接疊
9. 先煮6分鐘
10. 掃蛋漿在餡餅皮上面,並撒上一些烘過的白芝麻 (可選)
11. 再煮 6分鐘(總共11分鐘)
12. 這樣完成了!

1. 可以加減餡料,例如加入粉絲、炒蛋

SumLook loves chinese chive. This Chinese Chives Pancake is a very local snack. Thus, I tried to make it with the Sandwich maker. You can also add or replace ingredients for fillings. It is easy to make with the Sandwich maker!

This recipe can make 2 Pancakes.
Ingredients:
1. Chinese chive (1 small bunch, diced)
2. Dry shrimps (1 Tbsp, diced) *
3. Shallot (1 , julienned)
4. Minced pork (some) **
5. Sugar (1/2 tsp, optional)
6. Salt (1/2 tsp)
7. Egg (1, whisked)
8. Toasted white sesame (some, optional)
9. Frozen pie crust (see pic below)
* Rinse and soak dry Shrimps for 20 minutes
** Marinate pork with some soya sauce, sugar, oil and white pepper
Method:
1. Prepare the filling:
1.1 Over medium heat, heat up oil
1.2 Fry diced dry shrimps until it is aromatic
1.3 Add in shallot, fry until it is aromatic
1.4 Add in minced pork, fry until cooked
1.5 Turn off fire. Add in Chinese chive and mix
1.6 Season with sugar, salt and white pepper, mix well
2. Preheat sandwich maker for 2 minutes
3. Whisk an egg for egg wash on top of the pancake
4. Roll out the frozen pie crust; cut out 2 rectangles; one bigger and one smaller than the sandwich maker mold
5. Lay the larger crust on the pre-heated sandwich maker
6. Make shape according to the mold
7. Spread the fillings onto the pie crust
8. Then lay the smaller pie crust on top. At the edge, fold the excess crust inwards
9. First cook for 5 minutes
10. Spread the egg wash on top of the pancake, then sprinkle toasted white sesame on top (optional)
11. Cook for another 6 minutes(11 minutes in total)
12. Then it is done!
Personal thought and tips:
1. Can add or replace ingredients for the fillings; for example, can add vermicelli or fried egg
