這食譜可製作出大約4-5人份量的醃料
材料:
1. 大蝦 (15 隻)
2. 粉絲 (1 包)
3. 蒜末 (約 4-5 湯匙)
4. 薑末 (約 2-3 湯匙)
5. 蔥花 (約 3-4 湯匙)
6. 牛油.黃油 (約 4-5 湯匙)
7. 橄欖油 (1 湯匙)
8. 蒜粉 (適量)
9. 鹽 (1 茶匙)
10. 糖 (1 茶匙)
11. 白胡椒粉 (適量)
做法:
1.首先處理好大蝦:
1.1 剪掉蝦的尖頭、觸鬚和腳
1.2 將蝦從中間切開,做成蝴蝶狀
1.3 把頭也切開兩半
1.4 將蝦稍微沖洗乾淨
1.5 用廚房紙巾把蝦拍乾
2. 用水將粉絲泡至半透
3. 製作醃料
3.1 取一大塊牛油.黃油,在室溫下待軟化
3.2 加入橄欖油、大蒜粉、鹽和糖
3.3 加入蔥花、薑末和蒜末; 拌勻
4. 在托盤上,先鋪上泡好的粉絲,再鋪大蝦在上面
5. 在蝦上加上白胡椒粉
6. 將醃料均勻地鋪在蝦肉上
7. 鍋裡燒水至沸,把蝦蒸5-7分鐘左右
8. 這樣便完成了!
個人心得:
1. 蒜末、薑末和蔥花分量可按個人喜好
2. 蒸蝦的時間隨蝦的份量和大小不同,不要蒸過熟

This recipe can make marinade for 4-5 servings of Marinade
Ingredients:
1. Prawn (15 pieces)
2. Vermicelli (1 pack)
3. Minced Garlic (about 4-5 Tbsp)
4. Minced Ginger (about 2-3 Tbsp)
5. Diced Spring Onion (about 3-4 Tbsp)
6. Butter (about 4-5 Tbsp)
7. Olive Oil (1 Tbsp)
8. Garlic Powder (some)
9. Salt (1 tsp)
10. Sugar (1 tsp)
11. White Pepper (some)
How to cook:
1. First prepare the prawns:
1.1 Trim off the rostrum, antenna and legs of the prawns
1.2 Cut the prawn in the middle and make it like a butterfly
1.3 Cut also the head into halves
1.4 Slightly rinse the prawns
1.5 Pat the prawns dry with paper towel
2. Soak the Vermicelli with water until slightly soft
3. Making the Gravy/Sauce
3.1 Soften a big chunk of butter at room temperature
3.2 Add in olive oil, garlic powder, salt and sugar
3.3 Add in diced spring onion, minced ginger and minced garlic; mix well
4. On a tray, first lay the soaked Vermicelli, then the prawns on top
5. Add white pepper onto the prawns
6. Spread the marinade paste onto the flesh of prawns evenly
7. Boil water in a wok, steam the prawns for about 5-7 mins
8. Then it is done!
Personal tips and thoughts:
1. For the quantity of minced garlic, ginger and spring onion, it can be adjusted according to personal taste
2. The steaming time for prawns varies according to the amount and the size of prawns. Don't over-cook it
