森綠很喜歡吃鹹派或蛋餅,早前試做薄蘑菇鹹派和薄夏南瓜鹹派,今次是試用 Bruno 三文治機 (Sandwich maker)來做這個西蘭花菠菜鹹派。在此分享我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出兩個西蘭花菠菜鹹派
材料:
1. 西蘭花菠菜 (1/3 個,切細顆)
2. 菠菜 (1 棵,切碎)
3. 洋蔥 (1/3 個,切粒)
4. 蒜頭.大蒜 (1 瓣,切成蒜末)
5. 雙份奶油 (3 湯匙) *
6. 牛奶 (3 湯匙) *
7. 雞蛋 (1 隻) *
8. 帕瑪森芝士 (3 湯匙)
9. 冷凍餡餅皮
* 雞蛋、雙份奶油和牛奶的比例為3隻雞蛋 + 125ml雙份奶油 + 125ml 牛奶 (視頻中,用了 1/3 的份量)
做法:
1. 先煮好餡料:
1.1. 用中火略炒香洋蔥和大蒜
1.2. 加入切碎的西蘭花,略炒
1.3. 用鹽、糖、洋蔥粉和黑胡椒調味
1.4. 炒至西蘭花變軟,幾乎煮熟,關火、待涼備用
1.5. 在一個碗裡,將雞蛋、牛奶、雙份奶油和帕瑪森芝士混合在一起
1.6. 在另一個碗裡,加入切碎的菠菜,炒好的西蘭花和洋蔥,最後加入蛋液,然後將所有材料混合均勻
2. 將三明治機預熱 2 分鐘
3. 攤出冷凍的餡餅皮,並切出兩個長方形,一個比三文治模具大,一個略小
4. 略壓餅皮讓它薄些
5. 將較大的餡餅皮放在預熱的三明治機上
6. 根據模具的形狀,讓餡餅皮貼服其上,造出凹位
7. 在餅皮上刺些小孔
8. 將餡料放在餅皮上,記得加入一些蛋液混合物
9. 在上面放較細的餡餅皮,並在邊緣位,將多餘的餡餅皮向內接疊、封口
10. 先煮8分鐘看金黃的和煮熟程度 (因為不同餡餅皮需時略有不同)
11. 再煮6-8分鐘(共約15分鐘)
12. 這樣便完成了!
個人心得:
1. 在第9步驟,餡餅皮向內接疊的話,可以防止餡餅的汁料向外溢出
2. 因為三文治機的厚度受限,所以需要稍為壓薄餅皮(第4步驟),不然餅皮焗後會有點厚而餡料則少了些味道。但不壓薄餅皮也是可以的。

SumLook loves quiche. Last time, I have made Mushroom quiche and Zucchini quiche; this time I will try to make Broccoli and Spinach Quiche by Hot Sandwich maker. It is easy to make with the Sandwich maker!
Here is our recipe. It is very to easy.

This recipe can make 2 Broccoli and Spinach Quiches.
Ingredients:
1. Broccoli (1/3, cut into small pieces)
2. Spinach (1 stalk, chopped)
3. Onion (1/3, finely diced)
4. Garlic (1 clove, minced)
5. Double cream (3 Tbsp) *
6. Milk (3 Tbsp) *
7. Egg (1 ) *
8. Parmesan cheese (3 Tbsp)
9. Frozen pie crust
* The basic ratio amongst egg, double cream and milk is 3 eggs + 125ml double cream + 125ml milk (In the video, 1/3 of the amount is used)
Method:
1. First cook the filling:
1.1. Fry onion and garlic, fry a bit
1.2. Add in the chopped broccoli, fry a bit
1.3. Season with salt, sugar, onion powder and black pepper
1.4. Fry until the broccoli is soft and almost cooked
1.5. Remove from heat and let the filling cool down
1.6 In a bowl, mix an egg, milk, double cream and parmesan cheese together
1.7 In another bowl, add in chopped spinach, the fried broccoli and onion, the egg mixture, then mix well all the ingredients
2. Preheat sandwich maker for 2 minutes
3. Roll out the frozen pie crust; cut out 2 rectangles; one bigger and one smaller than the sandwich maker mold
4. Roll the dough to make it slightly thinner
5. Lay the larger crust on the pre-heated sandwich maker
6. Make shape according to the mold
7. Fork some small holes on the pie crust
8. Spread the filling onto the pie crust; remember to add some the egg mixture
9. Lay the smaller pie crust on top. At the edge, fold the excess crust inwards to close the pie pocket
10. First cook for 8 minutes to see how cooked it will be as different dough might require different amount of time to cook
11. Cook for another 6-8 minutes(About 15 minutes in total)
12. Then it is done!
Personal thought and tips:
1. For step 9, the extra crust has to fold inwards to prevent the spill of the fillings
2. For setp 4, I rolled the dough thinner because the sandwich maker has limited height. If the crust is too thick, the filling layer will be rather thin and the taste will not stand out. But this step is optional.
