Bruno Ice Cream Maker Recipe 冰淇淋機食譜: 薑汁雪糕 Ginger Ice Cream (美味辛辣的雪糕)


森綠以前試過吃薑汁雪糕,實在太好吃了,有薑的辛辣味和甜甜的味道,舌尖上有很多不同層次的味道,所以今次試做了薑汁雪糕。味道不錯。在此分享我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出 1 杯的雪糕

材料:
1. 薑汁 (1.5-2 湯匙)
2. 蛋黃 (1 個)
3. 牛奶 (120 ml)
4. 淡奶油 (30 ml)
5. 煉奶 (15 克)
6. 糖 (20 克)

做法:
1. 將薑汁加入牛奶中,小火加熱至將要沸騰
2. 關火。 把牛奶放在一邊冷卻
3. 將糖加入蛋黃中。 攪拌至稠且顏色發白
4. 將蛋液一點一點加入暖牛奶中,拌勻
5. 將雞蛋和牛奶混合物加熱至80-85度,然後關火
6. 加入淡奶油和煉乳,拌勻
7. 去除浮在混合物上面的泡沫
8. 將混合物倒入雪糕機中,調到“醇厚”
9. 調到“醇厚”
10. 大約100分鐘後,便完成了!

個人心得:
1. 想為雪糕定型的話,可以將雪糕放進紙杯內並放進冰箱雪藏
2. 想增加辛辣味的話,也可以連薑蓉加入雪糕

SumLook tried ginger ice cream before and it was very yummy. The ice cream contains the spiciness from ginger and at the same time it is sweet; there are so many layers of tastes in one ice cream. Thus, I tried to make ginger ice cream this time. The taste is quite nice.

Here is our recipe. It is very to easy to make.

This recipe can make 1 big scoop of Ice Cream.

Ingredients:
1. Ginger Juice (1.5-2 Tbsp)
2. Egg Yoke (1)
3. Milk (120 ml)
4. Whipping Cream (30 ml)
5. Condensed Milk (15 g)
6. Sugar (20 g)

Method:
1. Add ginger juice into milk and warm up over low heat until it is about to boil
2. Turn off the fire. Set the milk aside to cool down
3. Add sugar into egg yolk. Blend until it is thick and pale in color
4. Add the egg mixture in to the warm milk bit by bit and mix well
5. Warm up the egg and milk mixture until 80-85 degrees then turn off the fire
6. Stir in whipping cream and condensed milk, mix well
7. Remove the foam on top of the mixture
8. Pour the mixture into the ice cream maker, turn to "Hard"
9. Turn to "Hard"
10. After about 100 mins, then it is ready!

Personal thought and tips:
1. To shape up the ice cream, you can put it into a paper cup and freeze it in the fridge
2. To increase the spiciness, can add also the minced ginger into the ice cream mixture
