Chinese Delicacy 中式美食: 煎蓮藕餅 Pan-fried Lotus Root Sandwich


這菜式酸酸甜甜的,很開胃。而從中醫的角度,蓮藕具有生津、止血化瘀、安神生智、健脾開胃的效果,《本草綱目》稱它為「靈根」。但蓮藕功效雖多,腹瀉、手腳冰冷、寒性體質或脾胃虛弱的人,不宜食用過多生藕。以下是我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出大約 4-5人的份量

蓮藕餅的材料:
1. 豬肉 (1/2 磅,剁碎)
2. 蓮藕 (1-2 根,切片)
3. 蔥 (適量,切碎)
4. 芫茜.香菜 (適量,切碎)
5. 鹽(1/2 茶匙)
6. 玉米粉.粟粉(2 茶匙)
7. 芝麻油(1 湯匙)
8. 青瓜.小黃瓜 (適量,切條)

醬汁:
1. 水(5 湯匙)
2. 醬油(3 湯匙)
3. 白醋(2-3 湯匙)
4. 糖(3 茶匙)
5. 玉米粉.粟粉(2 茶匙)

做法:
1.首先切好材料:
1.1 將豬肉剁碎
1.2 將蔥和芫茜.香菜切碎成蔥花和芫茜末
1.3 將青瓜切條
1.4 將蓮藕切片,厚度約0.5厘米
2. 做蓮藕餅
2.1 把蔥花、芫茜末和鹽加入免治豬肉
2.2 加入玉米粉.粟粉、芝麻油,將所有材料混合均勻
2.3 將混合好的豬肉舖在一片蓮藕上
2.4 再放一塊蓮藕在豬肉上,稍微擠壓,讓洞裡也擠滿肉
3. 做醬汁: 在一個碗裡,將水、醬油、白醋、糖和粟粉混合均勻
4. 熱平底鍋裡放油,放入並煎蓮藕餅至金黃
5. 翻蓮藕餅至另一面並煎至金黃
6. 取出蓮藕餅
7. 將蓮藕餅放回乾淨的平底鍋中
8. 倒入少許水,蓋上鍋蓋煮至大部分水分已蒸發掉
9. 翻轉蓮藕餅,蓋上蓋子,煮至水分都蒸發掉
10. 倒入醬汁,讓蓮藕餅稍微吸收醬汁
11. 翻轉蓮藕餅,煮至醬汁變稠
12. 這樣蓮藕餅便完成了!
13. 上桌時,在碟的底部舖一層青瓜絲
14. 把蓮藕餅放在上面,並淋上一些醬汁
15. 這樣便完成了!

This dish is sweet and sour so it is very appetizing. According to Chinese Medicine, Lotus root is full of vitamin c and iron, and is good for our digestive system. This recipe is easy and yummy. I hope you like it.

This recipe can make about 4-5 persons portion

Ingredients for lotus root sandwich:
1. Pork (1/2 pound, minced)
2. Lotus Root (1-2 stick, sliced)
3. Spring Onion (some, chopped)
4. Parsley (some, chopped)
5. Salt(1/2 tsp)
6. Cornstarch(2 tsp)
7. Sesame Oil(1 Tbsp)
8. Cucumber(some, julienned)

Sauce:
1. Water(5 Tbsp)
2. Soya Sauce(3 Tbsp)
3. Vinegar(2-3 Tbsp)
4. Sugar(3 tsp)
5. Cornstarch(2 tsp)

How to cook:
1. First prepare the ingredients:
1.1 Mince the pork
1.2 Chop the spring onion and parsley
1.3 Julienne cucumber
1.4 Slice the lotus root, with about 0.5cm thick
2. Make the Lotus Root Sandwich
2.1 Add the chopped spring onion, parsley and salt into the minced pork
2.2 Add in corn starch, sesame oil and mix well all ingredients
2.3 Spread the marinated pork onto a slice of lotus root
2.4 Put another piece of lotus root on top and slightly squeeze
3. Mix well Water, Soya Sauce, Vinegar, Sugar and corn starch in a bowl
4. Heat up oil in a pan, pan-fry the lotus root sandwich until golden
5. Flip the lotus root sandwich, fry the other side until golden
6. Take out the lotus root sandwich
7. Put the sandwich back into a clean pan
8. Pour in little water, put on lid and cook until most water is evaporated
9. Flip the sandwich, put the lid on, cook until water is evaporated
10. Pour in the sauce and let the sandwich absorb the sauce a bit
11. Flip the sandwich, cook until the sauce is thick
12. Then the lotus root sandwich is done!
13. When served, spread a layer of julienned cucumber at the bottom
14. Put the sandwich on top and spread some sauce on
15. Then it is done!
