Lemongrass Pork Chop 香茅豬扒.豬排 (又野味又易煮的家常食譜)


很喜歡豬扒,又野味又易煮。森綠一家大小都很喜歡這菜式!以下是我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出大約醃1塊斧頭豬扒.豬排 (2塊普通豬排) 的醃料

醃料:
1. 斧頭豬扒.豬排 (1 塊)
2. 香茅 (1 枝)
3. 紅甜椒 (1/2 個) *
4. 乾蔥頭 (1 個)
5. 魚露 (1 湯匙)
6. 醬油 (1 湯匙)
7. 糖 (1 湯匙)
8. 白胡椒粉 (適量)
9. 水 (1 湯匙)
*喜歡辣味的話,可以用辣椒來代替

肉類:斧頭豬扒.豬排

做法:
1.首先做醃料:
1.1 將香茅切段,用刀用力拍打香茅,然後切碎
1.2 將紅甜椒或辣椒切碎
1.3 把乾蔥頭切碎
1.4 將切碎的香茅、紅甜椒和乾蔥頭放入碗中
1.5 加入醬油、魚露、糖、白胡椒粉和水,拌勻
1.6 醃汁完成了
2. 在豬扒.豬排上刺孔
3. 將醃料鋪在豬排的兩面令豬排入味
4. 把豬排放入冰箱內醃1-2天
5. 開始煎豬排
5.1 把豬排上的所有醃料和材料弄走或抺走
5.2 蓋上蓋子,用中高火將豬排煎3-4分鐘
5.3 將豬排的側面也煎香
5.4 將豬排翻過來,蓋上鍋蓋煎另一面3-4分鐘
5.5 檢查豬排是否煮熟,然後就完成了!

個人心得:
1. 豬排上的醃料會讓豬排容易煎燶,所以煎前要記得把豬排上的醃料弄走或抺走

This recipe can make marinade for 1 piece of Tomahawk or 2 pieces of regular pork chop

Ingredients for Marinade:
1. Tomahawk (1, pork)
2. Lemongrass (1 stick)
3. Red Bell Pepper (1/2) *
4. Shallot (1)
5. Fish Sauce (1 Tbsp)
6. Soya Sauce (1 Tbsp)
7. Sugar (1 Tbsp)
8. White Pepper (some)
9. Water (1 Tbsp)
*Can use chilli for more spiciness

Meat:Tomahawk

How to cook:
1. First make the marinade:
1.1 Cut the lemongrass, pat it hard with chopper then mince it
1.2 Mince red bell pepper or chilli
1.3 Mince the shallot
1.4 Put minced lemongrass, pepper and shallots in a bowl
1.5 Add in soya sauce, fish sauce, sugar, white pepper and water, mix well
1.6 The marinade is done
2. Poke some holes on the pork chop
3. Spread the marinade onto both sides of the pork chop
4. Marinade the pork chop for 1-2 days in the fridge
5. Start frying the pork chop
5.1. Remove all the marinade and minced ingredients from the pork chop
5.2. Put a lid on and fry the pork chop over medium high heat for 3-4 minutes
5.3. Flip the pork chop, fry the other side for 3-4 minutes with a lid on
5.4. Check if the pork chop is well cooked then it is done!

Personal thought and Tips:
1. The ingredients in marinade will make the pork chop easy to get burnt so it is a must to remove all the ingredients in marinade before pan frying the pork chop
