Chinese Delicacy: Siu Mai 燒賣 (在家中,也可輕易做到 ! )


森綠的孩子很喜歡燒賣,所以決心學懂怎樣做!以下是我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出大約 20 顆的燒賣

材料:
1. 豬肉 (1/2 磅,切小丁)
2. 冬菇.香菇 (4顆,切小丁)
3. 胡蘿蔔 (適量,切小丁)
4. 蝦 (4安士,切大丁)
5. 燒賣皮或雲吞皮 (約20張)
6. 醬油(1 湯匙)
7. 蠔油(1/2 湯匙)
8. 白胡椒粉(適量)
9. 鹽(1/2 茶匙,可免)
10. 糖(2 茶匙)
11. 粟粉(2 湯匙)
12. 泡打粉(1/2 茶匙,可免)
13. 水(2 湯匙)
14. 芝麻油(1 湯匙)
15. 橄欖油(1 茶匙)

肉類:脢頭

做法:
1.首先切好材料:
1.1 將豬肉切片後,切成小丁
1.2 將已泡軟的冬菇切片後切成小丁
2. 做醃料
2.1 將6-13項材料混合,拌勻
3. 將醃料加入豬肉中令豬肉入味,拌勻
4. 加入冬菇丁、麻油和橄欖油,拌勻 5. 把豬肉放入冰箱內醃4-6小時
6. 將胡蘿蔔切小丁,這是用來放在燒賣上
7. 把蝦切大丁,並用白胡椒粉調味,拌勻
8. 將蝦加入豬肉中,拌勻
9. 是時候包燒賣了
9.1. 將一勺餡料放在燒賣皮的中央
9.2. 用兩隻手指做形成 C 形來托著燒賣皮
9.3. 將筷子插在中間,並繞著筷子包燒賣
9.4. 輕輕擠壓燒賣,並同時將餡料擠入回燒賣中,做時不斷轉動燒賣
9.5. 在上面再放一些餡料,弄平,讓燒賣飽滿
9.6. 將多餘的燒賣皮向內折疊或剪掉
9.7. 把切好的胡蘿蔔放在上面作裝飾
10. 將燒賣蒸25分鐘
11. 這樣便完成了!

個人心得:
1. 在蒸燒賣前,可在燒賣底部放一片很薄的胡蘿蔔片,這樣在蒸熟後,底部的燒賣皮便不容易被弄爛

This recipe can make about 20 pieces of Siu Mai

Ingredients:
1. Pork (1/2 pound,diced)
2. Shitake mushroom (4,diced)
3. Carrot (some,finely diced)
4. Shrimp (4oz,dice)
5. Siu Mai Wrap or Wonton Wrap (about 20 pieces)
6. Soya Sauce(1 Tbs[)
7. Oyster Sauce(1/2 Tbsp)
8. White Pepper(some)
9. Salt(1/2 tsp, optional)
10. Sugar(2 tsp)
11. Cornstarch(2 Tbsp)
12. Baking soda(1/2 tsp, optional)
13. Water(2 Tbsp)
14. Sesame Oil(1 Tbsp)
15. Olive oil(1 tsp)

Meat:Pork Shoulder

How to cook:
1. First prepare the ingredients:
1.1 Slice and dice pork into small cubes
1.2 Slice and dice the soaked shitake mushrooms into small cubes
2. Make the Marinade
2.1 Mix well items 6-13
3. Add the marinade into the pork and mix well
4. Add in diced shitake mushroom, sesame oil and olive oil, mix well
5. Marinade the pork for 4-6 hours in the fridge
6. Slice and dice finely the carrot
7. Dice the shrimp into large pieces and season with white pepper, mix well
8. Add the shrimp into the pork, mix well
9. Time to make the siu mai
9.1. Put a scoop of filling onto the center of a wrap
9.2. Holding the wrap with 2 fingers making a C shape
9.3. Stick a chopstick in the middle, and wrap siu mai around the chopstick
9.4. Gently squeeze the siu mai while put the filling into the wrap
9.5. Put some more filling on top, flatten it a bit
9.6 Fold the extra wrap inwards or cut it
9.7. Put the diced carrot on top for decoration
10. Steam the siu mai for 25 minutes
11. Check if the pork chop is well cooked then it is done!

Personal thought and Tips:
1. Can put thin slice under the siu mai for steaming. Then the wrap at the bottom will not break easily after steaming
