Bruno Ice Cream Maker Recipe 冰淇淋機食譜: 粟米雪糕.玉米冰淇淋 Corn Ice Cream


森綠剛買了Bruno 冰淇淋機 (雪糕機) 。十分雀躍要試玩不同雪糕,便在家找材料做。以前試過吃粟米雪糕.玉米冰淇淋,十分美味,所以今次試了做,味道很不錯,十分喜歡。在此分享我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出 1 杯的雪糕

材料:
1. 雞蛋 (1 顆)
2. 淡奶油 (70 克)
3. 練奶 (20 克)
4. 粟米.玉米 (1/2 條)
5. 糖 (10 克)
6. 檸檬汁 (數滴)
7. 蜂蜜 (1 茶匙)
8. 水 (1-2 湯匙)

做法:
1. 製造玉米糊
1.1 取出玉米粒並蒸熟
1.2 將蒸好的玉米粒冷卻
1.3 將玉米粒加入攪拌機中,加入少許水
1.4 把玉米盡可能磨得幼滑
1.5 用勺子幫助將玉米過篩,使其更加幼滑
1.6 把少許蜂蜜加入玉米糊中,拌勻
2. 將蛋黃和蛋清 (蛋白) 分離到2個碗中
3. 將蛋清和蛋黃稍微打散
4. 將淡奶油打起至稠,打至可以形成一個小峰
5. 將1/2的蛋黃加入淡奶油中,拌勻
6. 將剩餘的蛋黃加入淡奶油中,拌勻
7. 加入玉米糊,拌勻
8. 加入煉奶,拌勻
9. 將混合物放入冰箱冷卻
10. 在蛋清 (蛋白)中加入幾滴檸檬汁和 1/2 糖
11. 將蛋白打至有大氣泡
12. 加入剩餘的糖,打至可以形成一個小峰
13. 將打發好的蛋白分3次加入蛋黃糊中,拌勻
14. 將混合物倒入雪糕機中,可加入一些玉米粒,調到“醇厚”
15. 大約100分鐘後,便完成了!

個人心得:
1. 如想雪糕的質地硬些,可以把做好的雪球放進冰箱雪藏1-2小時
2. 雪糕機煮食時間會因食材溫度和其他因素而變化,要不小時查看雪糕的質地

SumLook just bought Bruno Ice Cream Maker. I am so excited to try different recipes. I have tried Corn Ice Cream which was so yummy. So I have tried to make it with the ice cream maker and the corn ice cream came out quite well.

Here is our recipe. It is very to easy to make.

This recipe can make 1 big scoop of Ice Cream.

Ingredients:
1. Egg (1)
2. Whipping Cream (70 g)
3. Condensed Milk (20 g)
4. Corn (1/2 stick)
5. Sugar (10 g)
6. Lemon Juice (a few drops)
7. Honey (1 tsp)
8. Water (1-2 Tbsp)

Method:
1. To prepare the corn paste
1.1 Get the corn kernel and steam them until well cooked
1.2 Cool the steamed corn kernel
1.3 Add the corn kernel into the blender and add a little bit of water
1.4 Puréed the corn as smooth as possible
1.5 Use a spoon to help sieving the corn through the sieve to make it extra smooth
1.6 Add some honey into the corn paste and mix well
2. Seperate the egg yolk and egg white into 2 bowls
3. Slightly beat the egg white and the egg yolk
4. Whisk the whipping cream until thick and a peak can be formed
5. Add 1/2 of egg yolk into the whipped cream and fold
6. Add the remaining egg yolk into whipped cream and fold
7. Add in the corn paste and mix well
8. Add in the condensed milk and mix well
9. Cool the mixture in the fridge
10. Add few drops of lemon juice and 1/2 of sugar into the egg white
11. Whisk the egg white till you see big bubbles
12. Add in the remaining sugar and whisk until a peak can be formed
13. Add in the whisked egg white into the egg yolk mixture, bit by bit
14. Pour the mixture into the ice cream maker, can add some corn kernel, turn to "Hard"
15. After about 100 mins, then it is ready!

Personal thought and tips:
1. If you prefer the texture to be firmer, you can freeze the ice cream in the fridge for 1-2 hours
2. The time required to make the ice cream varies according to the temperature of the mixture and other factors. So you will need to check the texture of the ice cream from time to time
