森綠十分喜歡咖喱,泰式、中式、日式都很喜歡。今次分享的是泰式黃咖喱,泰式咖喱都用上很多新鮮香草,加上濃濃的咖喱香氣和味道,令人胃口大開。而視頻中所用泰式黃咖喱膏是我目前覺得最好吃的(見下圖)。以下是我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出大約4-5人份的泰式黃咖喱
材料:
1. 您選擇的肉類*
2. 土豆.馬鈴薯 (1 個)
3. 櫻桃番茄 (8-10個,隨意)
4. 燈籠椒 (1 個)
5. 洋蔥 (1/2 個)
6. 翠玉瓜 (1/2 條)
7. 泰式黃咖哩醬 (1 包)
8. 草菇 (8-10個,隨意)
9. 泰國蘿勒葉.九層塔或香菜 (隨意)
10. 椰奶 (200 亳升)
* 用醬油,糖和香油醃肉
做法:
1. 處理肉類: 視頻中用的是豬肉,先用醬油,糖和香油把肉略醃
2. 把土豆.馬鈴薯去皮,並煲熟,也把草菇焯熟
3. 用中火炒醃過的肉至8成熟,然後把肉取出,備用
4. 用中火略炒洋蔥和和已煮熟的土豆.馬鈴薯
5. 當洋蔥略軟時,加入翠玉瓜和燈籠椒,略炒
6. 加入一些水,然後加入黃咖哩醬
7. 轉小火,慢慢拌勻咖哩膏
8. 加入椰奶並拌勻
9. 用中低火燜,當咖哩汁微沸時,加入已煮的肉和焯過的草菇
10. 用糖和鹽調味
11. 當它再次沸騰時, 加入櫻桃番茄
12. 最後加入泰國羅勒或香菜便完成!
個人心得:
1. 可以選擇加入自己喜愛的蔬菜
2. 除了與白飯同吃,也可以和金邊粉或中式幼麵同吃,十分美味

SumLook loves curry. Thai, Chinese or Japanese curry are all my favorite. For Thai curry, a lot of fresh herbs are used so it is very aromatic. The Yellow curry paste used in the video is the yummiest one I have tried so far (see pic below). This recipe is very easy and yummy. I hope you like it.

This recipe can serve 4-5 persons.
Ingredients:
1. Meat of your choice*
2. Potato (1 )
3. Cherry tomatoes (8-10)
4. Bell Pepper (1 )
5. Onion (1/2 )
6. Zucchini (1/2 )
7. Thai Yellow Curry Paste (1 pack)
8. Straw mushroom (8-10)
9. Thai Basil or parsley (as much as you want)
10. Coconut milk (200 ml)
* Use Soya Sauce, sugar and sesame oil to marinate the meat
How to cook:
1. Meat: Pork was used in the video. Marinate the meat with Soya Sauce, sugar and sesame oil
2. For potato, first peel it then boil to cook it. For straw mushrooms, boil to cook it
3. Fry the marinated meat over medium heat until it is 80% cooked and then take out and set aside
4. Fry the onion and potato over the medium heat
5. When the onion is a bit soft, add in zucchini and bell pepper; fry a bit
6. Add some water, turn to medium low fire, and slowly mix well the curry paste
7. Add the coconut milk and mix well
8. When the sauce starts to bubble, add in the cooked meat and straw mushrooms
9. Season with sugar and salt
10. When the sauce bubbles, add in the cherry tomatoes
11. Lastly, add in the Thai Basil or parsley then it is done!
Personal thought and Tips:
1. For the vegetables, you can always add in the veggie that you like.
2. Other than rice, the curry can also eat with rice noodle.
