Fried Salmon with tomatoes in white wine sauce 蕃茄白酒煎三文魚


森綠的孩子都很喜歡三文魚,所以不時會煮給他們吃,孩子們特別喜歡這個蕃茄白酒汁因為味道酸酸的,很開胃。森綠一家大小都很喜歡這菜式!以下是我的食譜,做法簡單,希望你們喜歡。

這食譜可製作出大約醃2大塊三文魚的材料

材料:
1. 三文魚 (2 塊)
2. 西芹 (2-3 條,切片)
3. 櫻桃蕃茄 (視乎個人口味)
4. 洋蔥 (1/2個,切丁)
5. 橄欖油 (3 湯匙)
6. 乾蘿勒 (適量)
7. 蒜頭.大蒜 (3 瓣)
8. 檸檬汁 (2+2 湯匙)
9. 牛油 (1+1 湯匙)
10. 白酒 (2 湯匙 + 100 ml)
11. 鹽(1+1 茶匙)
12. 糖(1 茶匙)

做法:
1.首先做醃料:
1.1 在碗中混合檸檬汁(2 湯匙)、白酒(2 湯匙)、橄欖油(3 湯匙)、乾羅勒和鹽(1 茶匙),拌勻
1.2 醃汁完成了
2. 清洗並抺乾三文魚
3. 將醃料淋在三文魚的兩面令三文魚入味
4. 把三文魚放入冰箱內醃2-3小時
5. 開始煎三文魚
5.1 把三文魚上的所有醃料弄走或抺走
5.2 將三文魚的每一面煎至酥脆
5.3 將煎好的三文魚取出並吸走多餘的油份
6. 在平底鍋裡,融化牛油(1 湯匙),炒香蒜片.大蒜片和洋蔥丁
7. 加入切好的西芹,略炒
8. 加入白酒(100 ml)和檸檬汁(2 湯匙)
9. 用鹽(1 茶匙)、糖(1 茶匙)和黑胡椒調味
10. 加入櫻桃番茄,略炒
11. 把火調小,加入牛油(1 湯匙),讓它在醬汁中融化
12. 把醬汁倒在三文魚上。 然後就完成了!

My kids love Salmon so I will cook it from time to time. The kids especially love this white wine sauce with cherry tomatoes because it is a bit sour and very appetizing. My whole family loves this dish. This recipe is very easy and yummy. I hope you like it.

This recipe can make 2 pieces of Salmon

Ingredients:
1. Salmon (2 pieces)
2. Celery (2-3 sticks, sliced)
3. Cherry tomatoes (personal preference)
4. Onion (1/2,diced)
5. Olive Oil (3 Tbsp)
6. Dry Basil (some)
7. Garlic (3 cloves)
8. Lemon juice (2+2 Tbsp)
9. Butter (1+1 Tbsp)
10. White wine (2 Tbsp + 100 ml)
11. Salt(1+1 tsp)
12. Sugar(1 tsp)

How to cook:
1. First make the marinade:
1.1 Mix Lemon juice (2 Tbsp), white wine(2 Tbsp), olive oil(3 Tbsp), dry basil and salt (1 tsp) in a bowl
1.2 The marinade is done
2. Clean and wipe the salmon dry
3. Spread the marinade onto both sides of the salmon
4. Marinade the salmon for 2-3 hours in the fridge
5. Start frying the salmon
5.1. Remove all the marinade from the salmon
5.2. Fry every sides of salmon until cripsy
5.3. Remove the fried salmon from heat and absorb the excessive oil
6. In the pan, melt the butter (1 Tbsp) and fry the garlic and diced onion
7. Add in sliced celery, fry a bit
8. Add in white wine (100 ml) and lemon juice (2 Tbsp)
9. Season with salt(1 tsp), sugar(1 tsp) and black pepper
10. Add in cherry tomatoes and fry a bit
11. Lower the heat, add in butter (1 Tbsp) and let it melt in the sauce
12. Pour the sauce over the fried salmon. Then it is done!
