Creamy Corn Soup, Cream of Corn Soup: 玉米.粟米忌廉湯 (香滑, 容易食譜)


森綠很喜愛玉米忌廉湯,以前因為不知怎樣可以令湯幼滑,所以一直沒有嘗試在家做,現在終於知道了竅門,在此分享可以煮出既滑溜又香濃的玉米忌廉湯食譜。以下是我的食譜,希望你們喜歡。

這食譜可製作出大約4-5人份的玉米忌廉湯

材料:
1. 粟米.玉米 (4 枝)
2. 洋蔥 (1 個)
3. 馬鈴薯.土豆 (1-2 個)
4. 煮食奶油 (200 ml) *
5. 香葉.月桂葉 (2 片)
6. 百里香 (1 枝)
7. 蜂蜜 (1 湯匙)
8. 豬骨湯或雞湯或水 (800 ml)
*  不用煮食用奶油也可以用牛奶

做法:
1. 在鍋中加熱牛油後,加入洋蔥,略炒
2. 然後加入馬鈴薯.土豆,略炒
3. 加入粟米粒.玉米粒,略炒
4. 然後注入上湯或水
5. 加入月桂葉.香葉和百里香
6. 以大火煮至馬玲薯.土豆變軟
7. 然後關火。 讓湯冷卻
8. 取出百里香枝和月桂葉.香葉
9. 將涼湯放入攪拌機,並攪拌直至幼滑
10. 用篩子過濾已攪拌的涼湯
11. 用勺子幫助篩出玉米粒的外衣,使湯更滑溜
12. 把幼滑的湯放回鍋中加熱,並加入煮食用奶油
13. 加入蜂蜜,並用糖,鹽調味
14. 用中小火把湯稍微煮沸。 然後便完成了!

個人心得:
1. 湯的幼滑度可隨個人喜好調較,可以只攪拌一部份的湯來調較幼滑度,也可以留一些玉米粒在最後加入
2. 視頻中用水來製作玉米忌廉湯以突出玉米的天然味道

SumLook loves Creamy Corn Soup. However, since I did not know how to make it very smooth and creamy, I didn't try making it at home. Now that I found out the trick, I would love to share my yummy and creamy recipe with you. Below is my recipe, and I hope you like it.

This recipe can serve 4-5 persons.

Ingredients:
1. Corn (4)
2. Onion (1)
3. Potato (1-2)
4. Bay leaves (2 pieces)
5. Thyme (1 twig)
6. Honey (1 Tbsp)
7. Cooking Cream (200 ml) *
8. Pork or chicken broth or Water (800 ml)
* Can replace cooking cream by milk

How to cook:
1. Heat up the oil in frying pan and fry the onion a bit
2. Add in potato and fry a bit
3. Add in the corn kernels, fry a bit
4. Add in the meat broth or water
5. Add in Bay leaves and Thyme
6. Boil with high heat until the potato is soft
7. Turn off the fire. Let the soup cool down
9. Remove Thyme twig and Bay leaves
10. Purée the cooled soup in a blender
11. Drain the Puréed soup through sieve
12. Use a spoon to help sieving to make the soup extra creamy and smooth
13. Boil the Puréed soup in the pot
14. Add in the cooking cream and Honey
15. Season with sugar and salt
16. Bring the soup to slightly boil with medium low heat
17. Then it is done!

Personal thought and Tips:
1. The smoothness of the soup can be adjusted by blending only a portion of the soup. You can also add some corn kernels at the end
2. I have used Water in the video to bring out the natural flavor of the corn
