Cream of Broccoli Soup 西蘭花忌廉湯


森綠很喜愛忌廉湯也很喜歡西蘭花, 有次在一家餐廳喝過西蘭花忌廉湯, 十分喜歡。以下是我的食譜,也可用此食譜換椰菜花做出椰菜花忌廉湯,希望你們喜歡。

這食譜可製作出大約4-5人份的西蘭花忌廉湯

材料:
1. 西蘭花 (2 球)
2. 洋蔥 (1 個)
3. 馬鈴薯.土豆 (1-2 個)
4. 帕瑪森芝士 (隨意)
5. 煮食奶油 (200 ml) *
6. 豬骨湯或雞湯 (1升)
*  不用煮食用奶油也可以用牛奶

做法:
1. 將西蘭花的小花與較硬的莖分開
2. 在開水鍋中加一點油,把小花略灼,然後取出備有
3. 在鍋中加熱牛油後,加入洋蔥,略炒
4. 然後加入馬鈴薯.土豆,略炒
5. 加入西蘭花的莖,略炒
6. 然後注入上湯
7. 以大火煮至馬玲薯.土豆變軟
8. 然後關火。 讓湯冷卻
9. 攪拌冷卻了的湯,也加入一些灼過的西蘭花小花
10.攪拌直至幼滑
11.然後把已打至幼滑的湯放回鍋中煮沸
12.當湯略沸時,加入煮食用奶油
13.然後加入剩餘的小花同煮
14.用糖,鹽調味
15.待湯煮沸後,如果喜歡,可以加入帕瑪森芝士
16.這樣便完成了!

SumLook loves cream soup and broccoli. I once had tried an amazing Cream of Broccoli Soup which impressed me a lot. Below is my recipe which could also be made into Cream of Cauliflower by replacing Broccoli with Cauliflower. I hope you like it.

This recipe can serve 4-5 persons.

Ingredients:
1. Broccoli (2)
2. Onion (1)
3. Potato (1-2)
4. Parmesan Cheese (Personal preference)
5. Cooking Cream (200 ml) *
6. Pork or chicken broth (1 L)
*  Can replace cooking cream by milk

How to cook:
1. Separate the florets of Broccoli from the tough stem
2. Add some oil into boiling water, blanch the florets, and then take them out, set aside for later use
3. Heat up the oil in frying pan and fry the onion a bit
4. Add in potato and fry a bit
5. Add in the stems of the broccoli, fry a bit
6. Add in the meat broth, and boil with high heat until the potato is soft
7. Turn off the fire.  Let the soup cool down
8. Blend the cooled soup and some blanched florets until smooth
9. Pour the blended soup back into the pot to boil
10. Add in the cooking cream when the soup is a bit boiling.
11. Add in the remaining blanched florets
12. Season with sugar and salt
13. Let it boil again and add in Parmesan cheese if you like
14 Then it is done!

Personal thought and Tips:
1. Can turn this recipe into Cream of Cauliflower by replacing Broccoli with Cauliflower.
