Corn Chowder 玉米濃湯


森綠很喜愛玉米湯便不斷研究怎樣煮。以下是我的食譜,也可用此食譜減去一些食材做出忌廉玉米湯,希望你們喜歡。

這食譜可製作出大約4-5人份的玉米濃湯

材料:
1. 玉米 (4-5條)
2. 洋蔥 (1 個)
3. 煙肉.培根 (6條)
4. 馬鈴薯.土豆 (2 個)
5. 牛油 (2 湯匙)
6. 雙份奶油 (4 湯匙) *
7. 蜂蜜 (1 湯匙)
8. 帕瑪森芝士 (隨意) **
9. 蔥 (隨意)
10. 黑胡椒
11. 百里香 (2小枝)
12. 香葉 (2片)
13. 水或雞湯 (1升)

*  不用雙份奶油也可以用牛奶或煮食用奶油
** 也可以用切達芝士

做法:
1. 在鍋中加熱牛油後,加入培根和洋蔥,炒一下,然後加入蒜末
2. 用少量糖調味,炒至洋蔥變透明
3. 然後加入馬鈴薯.土豆,略炒
3. 加入玉米,然後注入水或上湯
4. 加入百里香和香葉.月桂葉
5. 用糖,鹽和黑胡椒調味,煮20-30分鐘,直至玉米和土豆變軟
6. 然後取出月桂葉,轉小火,取出一半的湯,讓它冷卻
7. 攪拌冷卻了的湯,直至幼滑
8. 然後把已打至幼滑的湯放回鍋中與另一半湯同煮
9. 加入雙份奶油或奶或食用奶油。如有需要,再用糖和鹽調味
10. 加一湯匙蜂蜜並拌勻
11. 待它再次沸騰便完成了!
12. 食用時洒上帕瑪森芝士和蔥花

個人心得:
1. 如只想喝忌廉玉米湯,可以減去煙肉,香葉和百里香並把所有湯料放入攪拌機打至幼滑

Corn Chowder is one of my favorite soups so I studied different recipes to come up with mine. Below is my recipe which could also be made into Cream of Corn by removing some ingredients. I hope you like it.

This recipe can serve 4-5 persons.

Ingredients:
1. Corn (4-5)
2. Onion (1)
3. Bacon (6 strips)
4. Potato (2)
5. Butter (2 Tbsp)
6. Double Cream (4 Tbsp) *
7. Honey (1 Tbsp)
8. Parmesan Cheese (Personal preference) **
9. Spring Onion (Personal preference)
10. Black Pepper
11. Thyme (2 twigs)
12. Bay leaves (2 pieces)
13. Water or chicken broth (1 L)

*  Can replace Double cream by milk or cooking cream
**Can also use Cheddar cheese

How to cook:
1. Melt the butter in the pot, add in bacon and onions and fry until the onions appear to be transparent
2. Add in the minced garlic and potato and fry a bit
3. Add in corn and pour in water or broth
4. Add in thyme and bay leaves
5. Season with sugar, salt and black pepper
6. Boil for 20-30 minutes
7. Remove bay leaves.
8. Lower the fire. Take out one half of the soup and let it cool down
9. Blend the cooled soup until smooth
10. Pour the blended soup back into the pot to boil with the rest
11. Add in the double cream. Season again with sugar and salt if necessary
12. Add in a spoon of honey and stir well
13. Let it boil again and it is done!
14. Sprinkle Parmesan cheese and spring onion when served

Personal thought and Tips:
1. Can turn this recipe into Cream of Corn by removing Bacons, thyme and Bay leaves, and blending all soup until smooth.
